The Michelin Red Guide is currently the most influential restaurant ranking in the world.
The first restaurant to receive three stars in the UK was Gordon Ramsay in London.
Owned and run by Gordon Ramsay, who is of Scottish descent.
secret
agent
No one knows the main principles and rules for awarding stars  it is a trade secret.
The main criterion for evaluation - cuisine.
Everything else -atmosphere, service, interior -is secondary. Only author's restaurants (with a chef) are awarded stars.
Being an inspector is anonymous. No one should know that he is on a "star" gastronomic mission.
The inspectors do not record or question the guests during their visit to the restaurant
They are forbidden to communicate with journalists and even to answer questions from their relatives and friends
about work, there is a common answer:
«I work at a publishing house» «I work at a publishing house» «I work at a publishing house» «I work at a publishing house» «I work at a publishing house» «I work at a publishing house»
«I work at a publishing house.»

as follows:
how the stars affect
restaurants and chefs
The mere fact that a restaurant is mentioned in the Red Guide, even without a star, is a recognition of the chef's skill and can serve as a powerful impetus to commercial success.

honors
In 1966, Alain Zik shot himself when he learned that his Paris restaurant had lost one star.
Rankings have their advantages, but they
also have significant disadvantages.
In 2003, French chef Bernard Loiseau killed himself only because of rumors that his restaurant might lose a star. The rumors were false.
Alain Chapelle had a heart attack for the same reason.
what could take away a Michelin star?
A star can be taken away by checking the quality of the food and the condition of the restaurant as a whole. It is considered the chef's responsibility to inform the restaurant owner of any deficiencies.
It is forbidden to use information about the awarding of a star. If a restaurant is found to be "bragging", Michelin has the right to remove it from the ranking. People should learn about the stars they receive from the Michelin Guide.

9 restaurants
Two of them (Twins Garden and Artest Chef's Table) received two Michelin stars.

Everyone makes mistakes
In 2017, Michelin mistakenly awarded a star to the roadside café for workers Le Bouche à Oreill instead of the luxury Parisian restaurant of the same name. During the two days of the star, the café in the town of Bourges had a record number of visitors and the phone was ringing off the hook.

scandalous inspector
In 2003, Michelin restaurant inspector Rémi Pascal published a scandalous book ("The Inspector Sits at the Table") in which he shed light on secret work. The revelation cost Remy his 16-year position he was fired by an angry management. The book was published in a small number of copies, was not a success, and was not translated into Russian.

Not everyone needs a star
Some restaurant owners and chefs are turning away from celebrities. For example, the 70-year-old owner of a popular street food outlet in Thailand, Jay Fai, asked to have her restaurant removed from the guide because she was not satisfied with working 11 hours a day.
Skye Gingell from the Petersham Nurseries Café, a shebeen-chic restaurant in London, did the same thing
